This is my mom's tomato saaru or soup that is served with steaming rice and a dollop of ghee. It is so appetizing and makes a wholesome meal when served along side a pappad or a simple poriyal.
Ingredients:
4 chopped cherry tomatoes or 1 big tomato chopped
3 to 4 cups water
Tamarind gooseberry size
Salt to taste
3 tsp sambar powder
Asafoetida water if using the gum about 2 to 3 tsp
Jaggery gooseberry size
For tempering:
1 tsp mustard seeds
Few curry leaves
Coconut oil and ghee
Asafoetida powder
Method:
1. In a saucepan, take water and chopped tomatoes along with salt, tamarind, jaggery and bring it a rolling boil.
2. When the tomatoes are cooked, add sambhar powder. (adjust the spice level accordingly).
3. Add the asafoetida water and simmer it.
4.Temper with mustard seeds, curry leaves and asafoetida.
5. Garnish with cilantro. Serve with hot rice.
