Mushroom Sabzi

This is an easy mushroom sabzi I used to prepare very frequently and it goes very well along side rotis or even rice. I found this recipe online and I loved it so much that I noted the recipe down and saved it in my drafts thankfully!

Ingredients:

Mushrooms, cleaned and chopped 10-12 nos

1 medium onion finely chopped

1 clove of garlic chopped

1 tsp ginger chopped

1 small tomato chopped

2 green chillies finely chopped

1/4 tsp turmeric powder

1/2 tsp coriander-cumin powder

1/2 or less red chilli powder

1/2 tsp garam masala powder

salt to taste

3 tsp oil

1 tbsp coriander leaves

1/2 tsp brown sugar

Method:

1. Heat oil in a pan and fry onions, ginger and garlic, green chillies till golden.

2. Add finely chopped tomatoes and fry further till it softens.

3. Now add all the powders and fry/mix well.

4. Now add the chopped mushrooms and mix slowly. Add salt and mix further. Leave it on medium low flame.

5. Do not add water at all since mushroom leaves good amount of water. Once you see water released mix slowly again, cover and cook for few more minutes until the mushrooms are tender (approx about 4 to 5 minutes).

6.Add brown sugar, adjust the salt and finally add the coriander leaves.

7. Mix one last time. Serve with either curd rice, dal rice or chapathis!
